Well, Cheri Romanoski is the person we go to for answers.
She created Cheri's Desert Harvest 30 years ago to promote the most unique of Arizona products.
Several years ago she invited us to see a ranch where the fruit grows and to her kitchen, where she prepares jellies, marmalades, syrups, candies and a host of other items.
Being that she harvests more than 35 tons of fruit every August and September, we thought it was a good time to share this video of her explaining the process of bringing prickly pear products to market.
